Ingredients:
- 6 large eggs
- 1/2 cup milk
- Salt and pepper to taste
- 1 tbsp. olive oil
- 1 cup chopped lion’s mane mushrooms
- 2 cups chopped spinach
- 1/2 cup grated cheese
Instructions:
- Preheat oven to 350°F.
- In a large bowl, whisk together eggs, milk, salt, and pepper.
- In a large oven-safe skillet, heat the olive oil over medium heat.
- Add the lion’s mane mushrooms and cook until tender, about 5 minutes.
