Shiitake Mushroom Stir-Fry Recipe

Ingredients:

  • 1 pound shiitake mushrooms, sliced
  • 2 tablespoons vegetable oil
  • 1 clove garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon brown sugar
  • 1 teaspoon cornstarch
  • 1/4 cup chicken broth
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh cilantro (optional)

Instructions:

  1. Heat the oil in a large skillet or wok over medium-high heat.
  2. Add the garlic and ginger and stir for about 30 seconds.
  3. Add the shiitake mushrooms and cook for about 5 minutes, stirring occasionally, until the mushrooms are tender.
  4. Add the red and green bell peppers and onion to the pan and cook for about 3-4 minutes, until the vegetables are slightly softened.
  5. In a small bowl, mix together the soy sauce, rice vinegar, brown sugar, cornstarch, and chicken broth.
  6. Pour the sauce over the mushrooms and vegetables and stir to combine.
  7. Cook for an additional 2-3 minutes, until the sauce has thickened.
  8. Season with salt and pepper to taste.
  9. Serve over rice, if desired, and sprinkle with cilantro.
